Garlic Grater

Use of the Garlic Grater: 
Separate cloves from the garlic bulb. Hit a clove with the back of a wooden spoon or kitchen hammer. This will slightly mash the clove making it easier to peel. Peel one or more large garlic cloves. Press the clove on the bottom of the dish or bowl and rub back and forth. This will grate the garlic clove, releasing it's spicy oil and turning the grated clove into an intensely flavored garlic paste.
Add your favorite oil to the paste and enjoy dipping torn pieces of  french bread.
For tasty variations, add: Balsamic vinegar, Parmesan cheese or soy sauce to the garlic oil.


Basic Caesar Salad/ serves 6

1-2 garlic cloves
2-3  bunches of romaine lettuce
1 cup homemade croutons
1/3 cup freshly grated Parmesan Cheese
Freshly ground pepper

Creamy Light Garlicky Caesar Dressing

Peel 1-2 cloves of garlic
Grate the garlic clove(s) on the bottom of the garlic grater salad bowl
Add to the bowl and whisk together:
1/3 cup light mayonnaise
1/3 cup light sour cream
1-2 tablespoons lemon juice
1 teaspoon anchovy paste-- or ---2 teaspoon Worcestershire  sauce
2 tablespoons of grated Parmesan Cheese
Freshly ground  pepper to taste
Tear the romaine lettuce into bite-size pieces and add to to garlic grater bowl.
Toss the romaine with the dressing to coat
Sprinkle with homemade croutons
Freshly grated Parmesan cheese and freshly ground pepper

Basic Homemade croutons:

Slice a firm textured bread (french or sourdough is really good) into ½ “ slices and brush both sides of the slices  with olive oil or soft butter. Stack the sliced bread and cut the bread into ½ “ cubes. Spread the cubes out on a baking sheet. Bake in a 300 degree oven for 25-30 minutes until the cubes are dry and crisp. To season the croutons, place the warm croutons in a bag and add any of the following: Italian Herbs, grated parmesan, onion or garlic powder , or dried parsley. Shake the bag for a minute or so and then store the croutons in an air tight container.


1 cup--Basic Garlic Salad Dressing

Grate 1-3 fresh  garlic cloves  in the bottom of the bowl
Add—1 Tablespoon dijon mustard
Whisk in 1/3 cup wine vinegar and 2/3 cup olive oil
Add salt and freshly ground pepper to taste

1 cup—Creamy Garlic Dressing

Grate 1-3 fresh garlic cloves in the bottom of the bowl
Whisk in ¼ cup wine vinegar and 1/4 cup canola oil
Add ¼ cup powdered sugar or sugar substitute
Mix in ¼ cup mayonnaise
Add--salt and freshly ground pepper to taste

¾ cup—Basil Garlic Dressing

Grate 1-3 fresh garlic cloves in the bowl bottom
Whisk together--½ cup extra virgin olive oil & ¼ cup wine vinegar
Add-- 2 teaspoons sugar or sugar substitute
Add—1 tablespoon crumbled dry basil
Salt and freshly ground pepper to taste
